    Woo Hoo!! Another topic right up my alley…..
    We should do a weekly segment on this….give us all dinner ideas to brighten our moods….
    last night I had a break as we had leftover chicken cutlet parmesan…kevin had a hero…and I had one leftover broiled pork chop from the night before which is what mom had with pasta and salad and I had pasta with marinara and salad…it was like a buffet…we all had something different but no leftovers….
    tonight I am making chicken a la king over biscuits…..
    tomorrow is turkey burgers and fries….
    I also have flounder fillet in the freezer which I havent made yet and fixings for meatballs…as you can see meal planning is right up my alley….thanks denise….I love talking about cooking!!

    We eat a lot of pasta. Our oldest daughter is a vegetarian and our youngest is an extremely picky eater. ): So….tonight, I was planning on having shrimp (although Abrah would not eat the shrimp) in a garlic sauce, over linguini, with a salad. We also love dipping french bread in olive oil. Marah and I made a chocolate cake for dessert. (: Well….Greg just called and wants to have subway tonight. Sounds great to me! We’ll save the shrimp for another night! (: I love the idea of sharing recipes Donna. We eat so simply, that maybe I could learn to “spice it up” a bit. (:

    Okay, my dinner will not sound very exciting and I’m not cooking it, but I have such a taste for it! I am having:
    –a turkey sandwich on whole wheat bread with red pepper hummus (rather than mayo), swiss cheese and baby spinach (rather than just lettuce)
    –carrot sticks
    –blue corn chips

    followed by:
    –lemon sorbet with blueberries, raspberries and blackberries

    and
    –two little chocolate balls my parents gave me :)

    I was very happy with a dinner I had a few nights ago:

    –grilled chicken, grilled yellow and red peppers, parmesan cheese shavings, and avocado slices all on baby spinach and topped with low-fat ranch dressing

    followed by above-mentioned dessert.

    Hope everyone enjoys their dinner! I love hearing what others are eating.

    oh my goodness…I always put hummus on sandwiches instead of mayo…too funny…and my friend, I happen to have red pepper hummus in my fridge too…at night I dip pretzels in it and it is also very good. and the vanilla sorbet sounds so good too…im grabbing my shopping list…bette yours sounds so good too…we arent big sea food people here…I do make flounder once in a while as I wrote above…not to mention you find time to bake a cake with everything else going on…your amazing..
    Denise, thank you for this today. While its great for all of us to discuss our issues from day to day every now and then it is so nice to just forget our troubles for a bit and focus on something fun and different. For me cooking is therapy. I plan my meals for the week and look forward to making it especially for Kevin who also sacrifices in this every day…at least he can come home to a nice dinner each night…such a fun day for posting…thanks again…

      Ah, great minds! Humus has become a staple in my fridge.
